Grilled Pork with Roasted Peppers

This week I made an impromptu dinner for myself and when I sat down to eat it I thought how good it looked it was definitely picture worthy!  It was Delicious too, so here's the recipe.

I love it when a plan comes together!

  • Season a couple of pork chops with bone-in with garlic, Mrs. Dash table blend and a little paprika for browning. Set aside for 30 minutes.
  • Cut red, green, yellow peppers and onions (I had bought mine already cut and packaged). Add to a medium size bowl and toss in 1-2tbsp of olive oil, season with garlic, pepper and sea salt to taste.
  • NOTE: I use the NuWave Oven to cook all of our food so my cooking instructions are based on this.
    Place pork chops on tall rack and cook for 8-10 minutes, check to make sure cooked through. If frozen, cook for 15-20 minutes.
  • Add pepper mixture to baking pan place on tall rack and cook for 5 minutes.
  • Serve with 1/4c of  brown rice.
