Smores Camp Fire Bites

Great for a party or just for fun with the kids

This past weekend it was family day, a time to unplug and enjoy each others company instead of being plugged in to a device. My mom decided to have a baking activity with the kids. We were also supposed to make a tent, but that didn't happen. The kids went into the pool and after that my toddler fell asleep and my 12 year old was ready to vacate the premises and visit his friends house down the street. So much for family time!

We did manage to do the baking activity --- which I will admit wasn't the best idea for my diet plan, but thanks to my Skinny Fiber I was able to maintain control and only had 3 s'mores bites. I had to say the were even very sweet. I was surprised at how easy they were to make and we had fun putting it all together.

There's nothing like spending family time and eating s'mores -- the only thing missing was the camp fire!

INGREDIENTS

  • 18 Marshmallows
  • 1 12 oz pkg of milk chocolate morsels (can use dark or bittersweet too)
  • 1/2 cup grand cracker crumbs
  • 18 toothpicks
  • wax paper

DIRECTIONS

  • Insert toothpick into 18 marshmallows, place on a tray; then freeze for 10-15 minutes.
  • Place chocolate morsels in a microwave safe bowl, and microwave for 1-2 minutes until morsels are melted; stir occasionally, until melted.
  • Dip each marshmallow into the melted chocolate; spooning chocolate over the top.(I just dipped the tops of my marshmallows instead). Let excess drip off, then dip or roll into graham cracker crumbs. Place on wax paper to cool and set.

Bon Appetite! And remember to eat in moderation.

Dangers of Diet Soda

Why DIET soda is NOT as good for you as you think! I'm particularly amazed by the number of people who comfortably drink diet soda with the belief that it's safer than ordinary soda. When researching the dangers of diet soda, sadly I've learned it is just as unhealthy as ordinary soda especially because of the ingredient aspartame. Aspartame is what is used to give diet soda that sweet taste.  It is an artificial sweetener and the manufacturers of diet sodas say by substituting sugar with an artificial sweetener, then they are drastically cutting down on calories contained. Unfortunately, this attempt to make beverages healthier for us does the complete opposite. Artificial sweetener will actually confuse the body.  For example if I were to drink a diet coke, because it tastes sweet, my brain will send a message to the pancreas to prepare for digestion of sugar, now that means more insulin will be produced. However, it will not find any sugar in the ...
