I made this new crockpot chicken recipe for dinner last night and it was a hit. I just had left overs for lunch and it tasted even better. I modified the recipe with the following healthy options.
Ingredients
5 Chicken Breasts (I used frozen)
1 Can Rotel (your choice), I used Tomato, Cilantro & Lime
1 Can Beans (your choice), I used Reduced Sodium Dark Red Kidney Beans
1 Can Corn (No Salt Added)
1 Cream Cheese Stick (reduced fat)
Directions
Spray crockpot with non stick cooking spray
Drain beans.
Add chicken first, season to taste (I used McCormick Grillers Mojito Lime Marinade)
Add all remaining ingredients on top of chicken
Cook on high for 4-5 hours (or till meat is tender)
Serve with brown rice
This actually comes out tasting like a zesty burrito bowl! Yum!
