This quick breakfast sandwich is only 4 points on Weight Watchers and quick to make on a busy morning. I love how the blueberries burst (or I poke them, lol) and the juices spread over the ricotta cheese. It taste like eating a blueberry cheesecake!
Ingredients:
2 Slices Whole Wheat Bread (reduced calorie)
1/2c Fat Free Ricotta Cheese
1/2c Fresh Blueberries
1/2tsp of sugar substitute (optional)
1/4tsp ground cinnamon to taste (optional)
8 oz black coffee (not my thing, but if you like drink up!)
Instructions:
Spread each slice of toast with 1/4 cup ricotta; top each with 1/4 cup berries. Combine sugar substitute with cinnamon; sprinkle over top. Broil until berries just start to burst and pair with coffee.
Swaps: Start with light English muffin or thin sandwich bread. Top with thinly sliced banana, pear or apple. Gluten free? Use gluten-free bread and ricotta cheese. (These swaps may affect PointsPlus® values.) I have a bit of a sweet tooth and drizzled some honey on mine which added 2 additional points, for a total of 6 points for this breakfast).
