Grilled Pork with Roasted Peppers

This week I made an impromptu dinner for myself and when I sat down to eat it I thought how good it looked it was definitely picture worthy!  It was Delicious too, so here's the recipe. I love it when a plan comes together! Grilled Pork with Roasted Peppers Season a couple of pork chops with bone-in with garlic, Mrs. Dash table blend and a little paprika for browning. Set aside for 30 minutes. Cut red, green, yellow peppers and onions (I had bought mine already cut and packaged). Add to a medium size bowl and toss in 1-2tbsp of olive oil, season with garlic, pepper and sea salt to taste. NOTE: I use the NuWave Oven to cook all of our food so my cooking instructions are based on this. Place pork chops on tall rack and cook for 8-10 minutes, check to make sure cooked through. If frozen, cook for 15-20 minutes. Add pepper mixture to baking pan place on tall rack and cook for 5 minutes. Serve with 1/4c of  brown rice.           E...

How to Use Lemons To Prevent Browning

Have you ever cut an apple in small pieces for your kids and then five minutes they don't want to eat it because they turned brown? Or what about preparing a dish for a party that contains apples or avocados ... how do you keep it turning from brown before your party? The ANSWER is ... Yes a lemon or lemon juice keeps fruit from browning. I've used it on apples and avocados ... I hate eating brown avocados LOL.  I normally just squirt the lemon juice on the apple slices. Others have actually soaked the apples in water and a 1tbsp of lemon. I have found that rubbing the lemon juice on the apples work great and if you leave to sit for a few minutes the lemon juice gets absorbed and you won't even taste it. I have to use this all the time to get the kids to eat their apples if they don't eat the entire thing in one day. For more great foodie tips; subscribe to my blog!

Never Give Up On You

Don't compare yourself with someone else's version of happy or thin. Accepting yourself burns the most calories. - Caroline Rhea 155-160 pounds and considered  overweight Today, I'm taking a moment to reflect back on my life long weight loss journey (still in progress). Since my teens I've always been overweight according to my height. I kept most of it down during my dancing days but I still was thicker than most girls in my class.  I got teased in school ... "Channie wannie with the big fat fannie" the kids would chant as they walked behind me... I hated that!  Funny thing is now, I look back at those high school pictures and thought I looked HOT! I'd kill to be that weight again! But when I was that age I had low self esteem and thought I was the fattest person in the world. Kids are just so mean these days. I really wish I knew then what I know now and what a world of difference it would have made for me. Needless to say I hated every day o...
