Berries & Cream Sandwich

This quick breakfast sandwich is only 4 points on Weight Watchers and quick to make on a busy morning.  I love how the blueberries burst (or I poke them, lol) and the juices spread over the ricotta cheese. It taste like eating a blueberry cheesecake! Berries & Cream Sandwich Ingredients: 2 Slices Whole Wheat Bread (reduced calorie) 1/2c Fat Free Ricotta Cheese 1/2c Fresh Blueberries 1/2tsp of sugar substitute (optional) 1/4tsp ground cinnamon to taste (optional) 8 oz black coffee (not my thing, but if you like drink up!) Instructions: Spread each slice of toast with 1/4 cup ricotta; top each with 1/4 cup berries. Combine sugar substitute with cinnamon; sprinkle over top. Broil until berries just start to burst and pair with coffee. Swaps: Start with light English muffin or thin sandwich bread. Top with thinly sliced banana, pear or apple. Gluten free? Grilled Salmon Kababs

Ingredients 2 tbsp chopped fresh oregano 2 tsp sesame seeds 1 tsp ground cumin 1/4 tsp crushed red pepper flakes 1-1/2 pounds skinless wild salmon fillet, cut into 1-inch pieces 2 lemons, very thinly sliced into rounds olive oil cooking spray 1 tsp kosher salt 16 bamboo skewers soaked in water 1 hour Directions : Heat the grill one medium heat and spray the grates with oil. Mix oregano, sesame seeds, cumin, and red pepper flakes in a small bowl to combine; set spice mixture aside. Beginning and ending with salmon, thread salmon and folded lemon slices onto 8 pairs of parallel skewers to make 8 kebabs total. Spray the fish lightly with oil and season kosher salt and the reserved spice mixture. Grill the fish, turning occasionally, until fish is opaque throughout, about 8 to 10 minutes total.
