Great for a party or just for fun with the kids .  This past weekend it was family day, a time to unplug and enjoy each others company instead of being plugged in to a device. My mom decided to have a baking activity with the kids. We were also supposed to make a tent, but that didn't happen. The kids went into the pool and after that my toddler fell asleep and my 12 year old was ready to vacate the premises and visit his friends house down the street. So much for family time! We did manage to do the baking activity --- which I will admit wasn't the best idea for my diet plan, but thanks to my Skinny Fiber I was able to maintain control and only had 3 s'mores bites. I had to say the were even very sweet. I was surprised at how easy they were to make and we had fun putting it all together. There's nothing like spending family time and eating s'mores -- the only thing missing was the camp fire!

Gluten Free No Dough Pizza

Every once in a while, well maybe more like one time a month; I get a HUGE pizza craving. I LOVE NY style pizza but I always feel guilty after eating a few slices. And of course my weight doesn't budge or I even gain a pound or two for the week. I recently came across this awesome gluten free, low carb and diabetic friendly no dough pizza. I'm looking forward to trying this the next time the craving hits.

Yummy Oven Baked Fried Chicken ~ I love me some Publix fried chicken, but they don't love me back. I found this baked version that has all the flavor without all the calories! 4 chicken breasts, skinless, boneless, pounded thin 1/2 tsp salt 1 tablespoon Season All (or other seasoning of your choice) 3/4 tsp pepper 1 cup flour 2 tsp paprika 1/2 stick butter Put the chicken into a bowl of milk to soak for about 25 minutes. Put the salt, Season All, pepper, flour, and paprika into a zipper bag or large bowl. Preheat the oven to 400 degrees. Melt the butter and pour into a 9 x 13 baking dish. Make sure the bottom of the entire dish is coated with the melted butter. Remove the chicken from the milk and shake off any excess milk, then dip (or shake) each chicken piece in the seasoning mix that's in the zipper bag or bowl.
