Getting Back On Track

This week I'm focusing on getting back to my good eating habits. It is so much easier to fall off the wagon then get back on it. The good news is; every day is a new day to get it right and start over. This morning I made a delicious whole wheat bagel with: Light cream cheese (lightly spread) 1/2 an Avocado 1 Hard Boiled Egg Seasoned to taste (I used Sea Salt, Garlic and Pepper) I was going to add diced tomatoes on top, but it was piled high and I didn't want to over do it. I took one bite and could not believe how delicious the flavors were. My mouth was in heaven! This was inspired by my mom who made a similar breakfast (whole wheat bagel, spinach, low fat cheese - also delicious!)

Clean Meatloaf

This recipe was shared with me by a friend of mine who makes this and meal preps for an entire week. She has lost 9lbs so far since adding Trim Down Fiber Plus to her weight loss regimen. She also eat cleans and exercises daily.  This recipe was super easy to make and I was surprised at how good it tasted. It also lasted me an entire week and I was able to have it with something different each time so it didn't get boring.  Doing this saved me a lot of money this week and kept me focused on eating right the entire week. 1 Pkg lean Turkey Meat 1 Can Tomato Sauce (low sodium) 1 Whole Egg 1 Egg White 1 Cup of Rolled Oats Half Onion Season to taste Preheat oven to 350 degrees. Mix all ingredients together in a large bowl. Spray meat loaf pan with non stick spray, then add mixture to a meatloaf pan. Cook in the oven for 30-40 mins on 350 degrees. Note: I used my NuWave oven for appx 30 mins. Keep checking it to make sure it doesn't dry out. Bon Appetite!  ...

I was impressed on how fast it cooked food, even frozen and I was hooked. Anything to make my life so much easier in the kitchen. So finally, I recd it in June/July and this week (August) I decided to use it.  Lasagna has been something that I've always struggled with. It either came out to dry, not enough flavor and I always had left overs that lasted forever and I eventually had to throw it out because no one wanted anymore. Greek Yogurt & Peanut Butter Dip

This delicious dip is a great healthy snack to have with strawberry's, bananas, apples, celery and any other fruit or veggie you enjoy (great on pretzels too). Since it's made with greek yogurt you also get additional protein with the snack. I'm finally getting to use my NutriBullet to make our morning smoothies!  I actually love having a protein and veggie packed smoothie in the morning. It really helps to start you off on the right foot. It's light, healthy and good for your body.   Here was today's recipe... ★  TropiTwist Morning Smoothie ~ Chantel Bernal  ★ Add the following contents to your NutriBullet canister: 50% Spring Greens 50% fruit (I used frozen Mango/Peaches and 1 fresh Banana) 1/4 cup Pumpkin Seeds (boost) 1 scoop protein powder Pineapple Juice to the max line I added the following supplements: (feel free to add your own) 1 packet of Immunocal 2 Tbsp of Melaleuca Vitality Omega 3 Creme Delight - Peach Mango Tango 2 scoops It Works Greens - Orange 

Easy Fiesta Chicken

I made this new crockpot chicken recipe for dinner last night and it was a hit. I just had left overs for lunch and it tasted even better.  I modified the recipe with the following healthy options. Ingredients 5 Chicken Breasts (I used frozen) 1 Can Rotel (your choice), I used Tomato, Cilantro & Lime 1 Can Beans (your choice), I used Reduced Sodium Dark Red Kidney Beans 1 Can Corn (No Salt Added) 1 Cream Cheese Stick (reduced fat) Directions Spray crockpot with non stick cooking spray Drain beans. Add chicken first, season to taste (I used McCormick Grillers Mojito Lime Marinade) Add all remaining ingredients on top of chicken Cook on high for 4-5 hours (or till meat is tender) Serve with brown rice This actually comes out tasting like a zesty burrito bowl! Yum! I forgot to take an after photo; next time I make this recipe I will update this post with an awesome after photo.

Stealhead Trout with Baked Potato

Seasoned trout with lemon juice, garlic, tsp butter, assorted seasonings. Wrap in foil and cook in NuWave oven no more than 20 mins. Perfect every time! Wrap red skin potatoes in foil and cook in NuWave for 60 minutes. Season to taste.

Strawberry Avocado Salad

Strawberry avocado salad ... mixed greens, fresh strawberries, avocado, walnuts and light poppyseed dressing. Simple, sweet and filling.

Tuna & Tomato Salad

This is one of my favorite low calorie, quick and easy meals. 1 cup lettuce 1 cup tomatoes 1-2 Tuna Packs (in water) 1 Tsp Olive Oil Sprinkle lemon juice to taste. Season to taste...I used garlic, Mrs Dash Table Blend, a little sea salt.

3 Ingredient Berry or Peach Cobbler

* Weight Watchers Friendly Ingredients: 1 Box White Cake Mix 2 Frozen Mixed Berries (12oz bags) [or peaches] 1 Can diet Sprite/Sierra Mist Soda  [or 12 ounces] Directions: In a 9×13 pan, line bottom of pan with frozen fruit (I sprayed pan with nonstick spray).  Pour white cake mix over fruit. Pour soda slowly over cake mix [do not stir]…this will be turn crispy and be the crust. If you stir, you will have a cake like topping. Bake 350 for 45-50 min Serves 16 Berry Cobbler Version / Weight Watchers Friendly

Grilled Pork with Roasted Peppers

This week I made an impromptu dinner for myself and when I sat down to eat it I thought how good it looked it was definitely picture worthy!  It was Delicious too, so here's the recipe. I love it when a plan comes together! Grilled Pork with Roasted Peppers Season a couple of pork chops with bone-in with garlic, Mrs. Dash table blend and a little paprika for browning. Set aside for 30 minutes. Cut red, green, yellow peppers and onions (I had bought mine already cut and packaged). Add to a medium size bowl and toss in 1-2tbsp of olive oil, season with garlic, pepper and sea salt to taste. NOTE: I use the NuWave Oven to cook all of our food so my cooking instructions are based on this. Place pork chops on tall rack and cook for 8-10 minutes, check to make sure cooked through. If frozen, cook for 15-20 minutes. Add pepper mixture to baking pan place on tall rack and cook for 5 minutes. Serve with 1/4c of  brown rice.           E...
